Better Than Hellman's Mayonnaise!
The Best Homemade Mayo - Better and HEALTHIER than Hellman's!
1 Organic Free-Range Farm Fresh Egg ( Room Temperature)*
1/2 tsp Coleman's Ground Mustard; ( I have also used Dijon)
1/2 tsp Finely ground Pink Himalayan Salt
1 1/4 Cup Extra Light Tasting Olive Oil ( Pompeian Brand)*
1 Tbsp Organic Lemon Juice ( Santa Cruz Brand works great; or Freshly Squeezed)
*ALL Ingredients NEED to be Room Temperature; and better quality ingredients make better tasting mayo!
In a Food Processor, Using an electric whisk, or an Immersion Blender ( All work equally well, depending on personal preference)
STEP 1; Place egg, mustard, salt and 1/4 Cup of Olive Oil.
STEP 2; Blend on Low/Medium until combined ( 30-60 seconds)
STEP 3; (keep blending constantly) SLOWLY, you cannot be too slow- TRUST ME! Slowly Drizzle- like a leaky faucet pace..... the remaining 1 Cup of Olive Oil. Don't rush it at the end- The slower you go the fluffier your Mayo will be. This should take 3-5 Minutes.
STEP 4; ADD Lemon Juice ( at the same pace you added the Olive Oil)
STEP 5; Refrigerate ( Optimally for 60 minutes prior to using)
** Store it in a sealed glass jar for best storage. It will be best within 14 days; and should be used within 7 days of the eggs expiration date.
I do NOT recommending doubling this recipe, if you need more mayo I suggest making several batches. The ingredients MUST be room temperature and the brand you use of the items makes a HUGE difference!
This is a staple in our house. I love Mayo and only want to feed my family the best organic food possible without any yucky ingredients.
